Guar has been cultivated in India since centuries. India accounts for 80% of the total guar produced in the world and 70% is cultivated in Rajasthan which is our location.

Guar gum (Galactomannan) is a high molecular weight carbohydrate polymer derived from the natural seed of guar plant (Cyampopis tetragonolobus). Part of the seed is Hull (14-17%), Endosperm (35-42%), and germ (43-47%). Guar gum is a polysaccharide consisting of a mannose backbone with a galactose side chain. The galactose is randomly placed on the mannose backbone with the average ratio 1:2 of galactose to mannose. Guar gum has a polymeric structure containing numerous hydroxyl groups, which are treated for manufacturing various derivatives used for special applications in various industries. The powder is off white to yellowish in color depending on the quality of the seed.

Properties :
The most important property of guar gum is its ability to hydrate rapidly in cold water to attain uniform and very high viscosity at relatively low concentrations. Another advantage associated with guar gum is that it is a soluble in hot/cold water and provides full viscosity in even cold water. Apart from being the most cost-effective stabilizer and emulsifier it provides texture improvement, and water-binding; enhances mouth feel; and controls crystal formationIt is inert in nature and is resistant to oil, greases, and solvents.

Applications :
Guar gum has applications in diverse fields due to its cost effective emulsifying and thickening properties:

Food :
1. In processed food as a stabilizer and in meat products as a preservative and lubricating agent.
2. In Bakery and confectionary as a moisture retention agent and as a dough conditioner. Maintains texture, color uniformity, and prevents synerisis due to water-binding properties.
3. In snacks and puddings for adherence of toppings and as a gelling agent.
4. In beverage it provides good mouth feel and stable viscosity.
5. In sauces, pickles, and in soups it controls water oil phase and prevents crystallization.
6. In pet food preparations it is used as a binder, thickener, stabilizer, and suspending agent.


Oil Well Drilling :
In oil well drilling mud, gives a better colloid thereby reducing water losses. It regulates the viscosity of mud solution, stabilizes and regulates the flow properties of the drilling mud.

Explosives :
In explosives it acts as water proofing agent, and gives better gelling and swelling.
Paper Industry :
Guar Gum provides better properties compared to substitutes. It gives denser surface to the paper used for printing. Guar Gum imparts improved erasive and writing properties, better bonding strength and increased hardness. Due to improved adhesion, it gives better breaking, mullen and folding strengths.

Textile Industry :
Guar Gum gives excellent film forming and thickening properties when used for textile sizing, finishing and printing. It reduces warp breakage, reduces dusting while sizing and gives better efficiency in production.

Cosmetics : Used as a thickener, protective colloid in creams and lotions. Also used in toothpaste, and shaving cream for easy extruding from the container tube.

Pharmaceutical :
n tablet manufacturing it is used as a binder and disintegrating agent and in micro-encapsulation of drugs.

Apart from the above applications it is also used in mining industry, photography, cement industry, water treatment, and tobacco industry.
